Yep, thank goodness somehow is actually believing me now! It's a weird ass bug that's either in the original game (and surely people would have spotted it) or it's in ScummVM.

Another good example: When Guybrush first enters the swamp on Plunder. Murray says "boo!", and then there's a whole second pause before Guybrush screams.

Ok, I just checked. Guybrush actually asks: "Would you let me into that guest room upstairs?" Goodsoup replies: "No! That room is locked for a reason." Yet, as everyone seems to agree, the room is UNLOCKED in Normal Mode. I don't recall this error in CMI when I first played it in...

It's interesting that as a Lucaskid (tm) I totally missed out on Sierra's games. I probably would have loved them, now I don't know where to begin. I don't like games where you can die suddenly without warning or can find yourself stuck because you didn't do something early on.

The largest file is 116MB, but together they combine to 1.2Gb. If the files are on the CD, then they're pretty much needed. You're not doing anything wrong, per se.
