Recently a simple solution to your problem with the missing menu button appeared: the SDL build. It only uses the back key and has a transparent button for the keyboard in the top left of the screen.

The problem with touchmode is specific to some devices. In general it is running fine on Android 6, too, like on the Nexus 5X with Android 6.0.1 I have. Running a recent 1.8.0 snapshot on Nexus 5X with Android 6.0 (now 6.0.1) and both input modes work fine. No issues with ScummVM on that Android version.
