To test, you should update to the newest version of ScummVM, by downloading one of the recent daily builds. Most, if not all, of those bugs should be fixed in the newest version.

If the bugs are still there, then you should file a bug-report.

Well, to make a 'point and click RPG', your best bet is probably AGS, as it has the most functionality of the engines mentioned here. It's designed mainly for adventure games though, so designing a combat system would require some programming skill and time investment. It's certainly possible though...

Ok. You do need the files that are installed to finish the game, but you can get them without running the installer. The scummvm readme has basic instructions. Basically you need the files compressed in the data1.cab file. 7zip should be able to do this. The format might even be native to Windows 7,...

The file you're missing is one of the many video files from the CDs. Sadly I don't have my CDs with me so I can't tell you which one it's on, but it's definitely there. You might try going back and re-checking the CDs for the missing file.

It doesn't seem to be able to find the disc ScummVM is not an all-purpose emulator. It can only play games that have been specifically added to the program, which can be found at the compatibility page . It's at around 8 hours here. They probably did something stupid like keying it to your computer's time and date rather than the timezone where the countdown is actually relevant (I would imagine somewhere in the US). So realistically, there's probably 12-15 hours to go on the countdown.

Well, there doesn't seem to be a daily build made specifically for ubuntu, but it's not very hard to get the source and compile yourself on Linux . According to the current compatibility list of the latest stable version, Soltys is not yet supported. So, no you can't play it on Android yet. Probably in the next version.
