How can I play Broken Sword 2 from hard disc?

I want to play the german version of the game completly from my hard disc.
I´ve downloaded the Cut Scene Pack from this site - this works fine.
But I want to have the german audio language too.

What must I do - to copy it to my hard disc - must I change the profile.txt?

If you listen to the sound files from the Broken Sword 2 cutscene pack in a standalone player (e.g. WinAmp), you'll notice that - unlike the Broken Sword 1 cutscenes - there aren't any voices in them. The voice-overs all come from the speech files, just like the in-game speech.

So if you have the German version of the game, all voices (including the ones that ones that are played over the cutscenes) should be in German. If you have the English version, all voices will be in English. There's no way to turn one version into another.

I know that but the question was how can I add the audio language in Scumm?
I want to hear George not only read!

Where I must copy wich files on the hard disc from my cd that this works?

you might be looking for http://scummvm.org/documentation.php?view=datafiles (scroll down to BS2)

basically you copy all the files from CD to HD, but you have to rename the speech and music files since they have different content but are named the same on both CDs
