You should be able to compress both the music and speech .bun files, as well as the cutscene .san files, using compress_scumm_bun and compress_scumm_san. Maybe searching the forum for these tools will turn up more information. For me, that brought down the size of the data files to about 460 MB.

If you're really desperate to save space, you could probably remove the .san files completely.
