I`m new to Scumm games, so what game should I get?

I'm pretty sure the consensus of the forums will be, "Whatever you can get your hands on."
"The Dig" is generally considered the weakest entry, and I personally am not a huge fan of the earliest games ("Maniac Mansion," "Zak McKracken," and "Indiana Jones and the Last Crusade"), but plenty of people on here will call me crazy for that.
Basically, if you can find any of the following in any format somewhere for a reasonable price, you will not regret it:
Loom
Indiana Jones and Fate of Atlantis
Monkey Island 1-3
Day of the Tentacle (which includes Maniac Mansion)
Sam & Max Hit the Road
Full Throttle
They're all classics. That's what was so special about the SCUMM games.

Fair enough, but it is true that "The Dig" experienced the most tumultuous development period of any SCUMM game (and that wasn't an easy accomplishment), and several of the developers were quoted as saying that they saw the final product as rushed or not meeting the game's lofty ambitions. (I wish I had citations for those, as I distinctly remember reading interviews when "The Dig" came out, but they may have been lost to annals of time...)Kaminari wrote: "citation needed" ™
The Dig has my favorite story of any Lucasarts game. As for its execution . . . it seems a few degrees short of boiling. More like tepid water.
For your first experience, you cannot go wrong with Day of the Tentacle or Sam 'n Max. After that, you really owe it to yourself to check out Loom, which is a rather haunting adventure story.
