I was just browsing through several game screenshots in Mobygames. It's quite interesting to note how much game graphics were changed and improved from the transition from EGA to VGA. I was always wondering, did the artists actually repaint everything? Did they add to existing screens? Some VGA screens seem to be enhancements over their corresponding EGA ones. Did artists have tools such as Photoshop back them? If anyone knows, please share some information, it's quite interesting
In any case, the graphics got a major overhaul in many games. Here are some examples:
Loom, Blacksmith's guild in EGA and VGA
Loom, storm in EGA and VGA
Loom, Lady Cygna's Grave in EGA and VGA
Monkey Island 1, title screen in EGA and VGA
Monkey Island 1, SCUMM bar in EGA and VGA
Monkey Island 1, decent looking pirate in EGA and VGA (huge difference here)
Indiana Jones 3 and the Last Crusade, title screen in Amiga and DOS 256
Indiana Jones 3 and the Last Crusade, Traveling to Venice in Atari ST and DOS 256
Indiana Jones 3 and the Last Crusade, Venice in Amiga and DOS 256
Indiana Jones 3 and the Last Crusade, At Henry's house in Amiga and DOS 256
Indiana Jones 3 and the Last Crusade, finding second marker in Atari ST and DOS 256
Indiana Jones 3 and the Last Crusade, library Roman numbers in Atari ST and DOS 256
Indiana Jones 3 and the Last Crusade, Brunwald castle in Atari ST and DOS 256
(tried to find screenshots of Zak McKracken, but Mobygames doesn't have screenshots from the FM-TOWNS version)
Edit: Added some Indy 3 examples

Deluxe Paint seems to have been the "Photoshop" of the 80s/early 90s
the article even mentions Monkey Island as one of the games it was used for
