Note that 1.4.0 is not available yet, this is just the "codename" of the *next* ScummVM release. And we make daily builds available for many platforms, including iPhone: http://buildbot.scummvm.org/builds.html
Though I must say, I never tried those for iPhone, so I can't say how well they work .

In between releases, new code goes into the "master" branch. This is what's currently flagged as the 1.4.0 development build, and this is what you get nightly snapshots from if you hit fingolfin's link and click "Download latest development build"
Since this where the main development is done though, there's no guarantees about how well it'll work. I.e. it should be for testing only. It doesn't go "beta", so to speak, until we start gearing up for a new release, and branch off "master" again to be stabilized. That won't be for a while though.
tl;dr: It's already there .

EDIT: Well, at least for supported engines and iPhone specific issues. For in-development engines it's not too useful until you reach a certain point.

is there a tutorial in the faq/rules for installing daily builds @ ipod/iphone?
install from cydia--->saving preference file-->saving scummvm files--->deleting scummvm files and copy the daily build/overwrite ?
(someone should update the wiki, compatibility list too)

I've been up all night testing all sort of measures to make the buildbot version (both stable and not) work, but to no effect yet :_(
I've got the 1.3.0b installed (latest on Cydia, iPad 2 here) and I've tried:
-Moving the ScummVM file and overwriting
-Overwriting the entire folder
I got a Black Screen and back to desktop with either way. I even tried to download and install one of the old .deb versions (which did work, but didn't help since it was an old version after all).
I've also tried:
-Erasing the Preferences
-Checking the log (nothing new saved, only from the time when it did not crash)
Please help!

Edit: Nevermind, I've got the answer! (Murphy's laws, as soon as I wrote this I got it >_<)
Somehow my Filezilla wasn't giving access rights to the ScummVM file, thus the crash.
Anyway, just so it doesn't happen again to anyone.........
Steps to install Nightly-Updated-ScummVM-iPad/iPhone!
----------------------------------------------------
0.-Download and extract ScummVM from the latest build (http://buildbot.scummvm.org/builds.html)
1.-Install ScummVM from Cydia
2.-Install OpenSSH from Cydia
3.-Install your-favourite-SSH-program (I prefer Filezilla because of the easy interface for FTP transfers, Putty for commands, that's for Windows)
4.-Connect to the iDevice via SSH (check that it's on, then connect to the same WiFi and put your iDevice IP where it belongs), use root//alpine as login data (default)
5.-Go to /Applications/ScummVM.app and replace the ScummVM with the new one from the package you downloaded
6.-CHECK that ScummVM has -rwxr-xr-x rights
7.-Close the SSH and run the ScummVM!
