I just had a look a the compatibility overview, and saw that some games are considered excellent and some only good. But for some that seem to make no sense.

ft and dig are considered good, while samnmax is considered excellent, but the comment below is the same, which makes me think that all of those should be considered excellent, shouldn't they?

The compatibility list "levels" are mildly confusing and should not be taken too seriously between good/excellent etc.
They are meant as a quick guide for novice users and there is a continual discussion about changing them to percentages as per DOSBox, but both systems are mainly "a rule of thumb" and thus should be "taken with a pinch of salt".
If you want detail, then I'd suggest looking at the engine wiki pages which tend to be more accurate:

As digitall explained they are rough estimates how we see the quality of support. In fact we just switched from percentage values to the levels because the former were completely confusing.
