1) Are you in contact with the original devs?
2) Are they willing to provide the source to those games?
3) Are you comitting your time and skill to write an engine for those games?

If one of the above is not true you might be out of luck.

ScummVM is not a "add a config file to let the next best game run" type of program

The Blackwell series runs on AGS and there is an Android port but I don't have an Android device so I can't give you instructions on how to get it working.

I've never heard of The Door series, but the Blackwell series uses AGS, which I thought had been ported to Android already. At least, the source code on GitHub has an Android folder with a README file in it that has some further links.

I don't know how well it works, though. Games that use plugins may be a problem, but from what I can recall the Blackwell games either don't, or they only use plugins that are already built into AGS.

The Last Door uses Flash, which is completely out of scope for ScummVM.
