I have some old game packages in my drawers How can I rip them to "fit" them in EscummVM?
I have monkey1, Sam&Max, The Dig, Indiana Jones... I'm very fond of graphical adventures!
Or, where could I find a complete list of available ROMs.

If by "ROMs" you mean data files, this page lists the data files ScummVM needs to play the games. In the case of CD versions, the files can usually be copied directly from the CD. In some cases, sound files can be compressed to save space. The ScummVM README has more information about that.
