From what I can see...
The graphics for Monkey Island 2 are 320x200 pixels.
Sounds (sound effects or music) can exist in several different versions for either PC Speaker, AdLib or Roland MT-32. I believe there is Roland MT-32 versions of all the music, but some of the sound effects exist only as AdLib. The "Mixed AdLib/MIDI mode" lets ScummVM play the AdLib version of the missing sound effects, while using MIDI or MT-32 for the rest.
If that doesn't work for you, I'm afraid I have no idea why. I haven't been as actively involved with ScummVM development lately as I used to be...

Re: Monkey Island 2: Le Chuck's Revenge
I don't know if this is any help, but "Monkey Island 2" works on my crummy Windows CE netbook's pckDOSBox 0.63- this is a mobile version of DOSBox based on version 0.63, it is not an official version.
If memory serves, the game also works on the CE version of SCUMMVM. In order to make it work the GAPI app must be used, and essentially it must be a 320h x 240v window in the upper-right of the screen.
If it works in those ways, surely it can work for you too? What exactly is wrong?
