Where is the Core audio option for OS X?

I grew up with the Mac versions of the Lucasarts games, and in looking around it seems like people have recommended using Core Audio for the audio settings to mimic the MIDI sound on Mac OS 7/8. I have the latest version of ScummVM, but I don't see a Core Audio option anywhere. Where is this setting? It's not an option under either the audio or MIDI tabs. Or what should I otherwise do to get the sound as close as possible as to how it would have been on a Mac back in the day? Thank you!

The "CoreAudio" option was renamed "Apple DLS Software Synthesizer" 3 years ago.
