Probably too many to remember them all, but off the top of my head my personal favorites:
- Riven (the sequel to Myst)
- Blade Runner
- Quest for the Glory (at least the first one, and the fourth one)
- The Secret of Monkey Island and the sequels up to Curse of Monkey Island ta least
- Loom (EGA) - preferrable with the orchestral soundtrack
- Indiana Jones and the Fate of Atlantis
- Sanitarium
- Toonstruck
- The Neverhood Chronicles
- Little Big Adventure
- Gabriel Knight and Gabriel Knight 2 (The Beast Within)
- Beneath a Steel Sky
- Broken Sword (at least the first one)
- Resonance
- Blackwell (series of 5 AGS adventures)
- The 7th Guest (and if you liked that, then The 11th Hour)

Oooh, someone uses that feature now. Cool! 8)

Day of the Tentacle is one of my favorites, partly because of how well designed I think it is. It could so easily have become over-reliant on detailed knowledge of American history... and I suppose there are references that completely pass me by. But the game still gives enough context that you get the gist of it anyway.

One of the few LucasArts adventures I managed to solve without hints.

My favourite is Indiana Jones and the Fate of Atlantis. It’s such a well-designed game, with a very good story. And it’s really three games in one, as there are three separate (and very different) paths through the game, one puzzle-based, one action-based and one team-oriented.

People have already posted some great ones, but I'll add a couple more to the list:

Grim Fandango -- an all-time classic in spite of its jankiness.
King's Quest V and VI -- the two best in the series IMO.
Space Quest IV -- I like this one the best out of the series, although it almost drove me crazy as a kid.
There's also a ton of good AGS games, but a few particularly good/notable ones are: A Tale of Two Kingdoms, Heroine's Quest, the Chzo Mythos series if you're into horror, Duty & Beyond, and the Ben Jordan games (mostly the 3rd one).
As someone rather obsessed with the books, I also quite like the two Discworld games, though they're a little obtuse.

Do "Zniw Adventure" and "Foxtail" (until the Chapter 4 release) count?

I love Foxtail. I've been waiting for the next chapter to come out. I'm following the developer on Discord. It's crazy with the situation in Ukraine right now. That's why there aren't any new developments. I've heard of Zniw Adventure, but I haven't played it yet.

My must-play adventure games in ScummVM are the Eco Quest games (I wish there was a CD version of the 2nd game), Freddy Pharkas, King's Quest IV: Perils of Rosella (would love to see a remake of this one), King's Quest V: Absence Makes the Heart Go Yonder, King's Quest VI: Heir Today, Gone Tomorrow, King's Quest VII: The Princeless Bride, Leisure Suit Larry V: Passionate Patti Does a Little Undercover Work, Pepper's Adventures in Time (wish there was a CD version of this game), The Bizarre Adventures of Woodruff and the Schnibble, Beneath a Steel Sky, Broken Sword: Shadows of the Templars, The Legend of Kyrandia: The Hand of Fate, Simon the Sorceror, Indiana Jones and the Fate of Atlantis, Loom, Zak McKracken and the Alien Mindbenders, Maniac Mansion: Day of the Tentacle, Secret of Monkey Island, Monkey Island 2: LeChuck's Revenge, Curse of Monkey Island, The Dig, Sam & Max Hit the Road, Discworld, Discworld 2: Missing Presumed ...!?, The Lost Files of Sherlock Holmes: Secret of the Rose Tatoo, and The Lost Files of Sherlock Holmes: The Case of the Serrated Scalpel.

I've played all of those games, and I enjoyed all of them very much. If I could get a hold of a copy, I would really like to play Touche: The Adventures of the Fifth Musketeer. I watched a few YouTube videos, and I like the Monty Python style of humor.
