Is there any resource listing the "correct" aspect ratio for each game supported by ScummVM? Finding the right setting is a hit and miss task, which often requires looking for something in the game that should be a circle...
I think the easiest way to figure out that we need a aspect ratio correction is to search ScummVM Wiki list of games (or google it when there is no info).
When the game resolution is 320x200 turn on aspect correction.
If it's something different like 320x240 or 640x480 don't use it.
Except in the case of DOTT, The Dig, and possibly Full Throttle where 320x200 is indeed a 16:9 resolution for the game. The newer games on the verge of SVGA were mostly made this way it seems. But they do vary. Pretty much most 1993 and earlier VGA/EGA games are 4:3 and need aspect correction.

For what it's worth, Aaron Giles, who made the Windows versions of Sam & Max Hit the Road and Full Throttle, uses Full Throttle as an example of where he thinks aspect ratio correction is needed.
