In ScummVM, clicking the button on the side of the S-Pen acts as a right-click. This is excellent. The slight problem is, on an S3, it also brings up the AirCommand interface every time, which is rather annoying.
Apparently there are some apps that fully support the button and prevent AirCommand opening, although I don't know if that's something in the app or in the S-Pen software, so it might not be something that can be controlled on the ScummVM side. Still, if there's a way to stop it triggering AirCommand, that would be really helpful.
Galaxy Tab S3 S-Pen button and AirCommand

This is a non-ideal fix but could work for you:
Try keeping the tip of the S-pen in contact with the screen while you press the button, it should do the right-click emulation without bringing AirCommand. I tested this using a Note 10.1 2014 Edition while playing Police Quest III.
It would help having a screen protector if you go ahead with this technique
