High resolution

Will it be possible to increase the resolution the game plays at? I.e. scale up the backgrounds, but render characters and other models at a higher resolution? I remember seeing an attempt at this before on the original engine, but with no success.

Currently not, but in the future most propably, also scale down for small screens

I wonder about that. I think that scalers, especially the higher-ones, although they do well on more cartoony graphics tend to erase some details in less cartoony games by smoothing too much. I can't tell you the amount of frustration I had first playing BASS because the scaler I initially was using made the tongs near the end of the game totally invisible. So I have to wonder what bad effect the sort of scalers normally used would have on the near-photo quality of GF's backgrounds.

shouldnt really be a problem with something like the hq scalers.

Except for the subtitles, I can't see much difference between the HQ2x scaler and the trivial 2x scaler when running games like The Curse of Monkey Island or Broken Sword in ScummVM. I assume I wouldn't see much difference between them with Grim Fandango's backgrounds either.

CMI and BS don't use scalers. You may, of course, have a scaler globally enabled in ScummVM, but that's ignored by the higher-resolution games (640x480) like those and others. That's why you can't see much (any) difference: scaling isn't applied.

And, longcat, the HQ scalers do a lot of smoothing. That's what gave me the trouble with the tongs in BASS (which are barely visible even if no scaling is used).

The default scaler (from the Options dialog) isn't used, but you can still set a scaler specifically for the game (in the Edit Game dialog), or use the keyboard shortcuts to change the scaler.

Yes, but Grim Fandango is not as pixelated as BASS so it would have a totally different effect.

And yes, you CAN apply scaling to those games, but no, you will not see MUCH of a difference, except the games will run at a higher resolution and smooth fonts and such. Scaling IS applied.
