You are referring to "target_md5", an evil hack we used briefly, but which was luckily abolished a long time ago, in favor of a proper solution which makes it unnecessary to override an MD5.
ScummVM should be able to correctly detect almost all fan-made localizations of SCUMM games (for the few remaining cases, the user has to manually select the correct game, but that is easy enough). The only "bad" thing that might happen is that it warns about an unknown MD5 upon start. Just ignore that
